Dark chocolate low FODMAP discs

I think only miraculous things can happen when you put chocolate and raspberries together. Which is why these low FODMAP chocolate discs are studded with freeze dried raspberries, a sprinkle of salt and a splash of pure maple syrup. Made with one saucepan and five ingredients, swap that store bought chocolate for making your own this Valentine’s Day.

Recipe notes:

  • Keep these in the fridge for the best texture
  • You can simply melt dark chocolate if you’d like, in place of making your own chocolate

Serves 10

Ingredients

120ml coconut oil
60g cacao powder
60ml maple syrup + 2 tablespoons for topping
3 tablespoons freeze dried raspberries
1/4 teaspoon good quality sea salt

Method

Melt the coconut oil in a saucepan over a low heat, before adding in the maple syrup and cacao. Mix together until combined before pouring into ten cupcake cases, splitting the mixture evenly between each.

Sprinkle with freeze dried raspberries and a pinch of sea salt and drizzle a little maple syrup over each. Pop in the freezer for 30 minutes to set and enjoy!
