Summer solstice and heirloom tomato salad

Happy summer solstice lovely people! The longest day of the year and the shortest night – also known as midsummer. This heirloom tomato salad is the perfect way to celebrate, because it’s Friday and sunny outside and a gorgeous day for a juicy, sweet, salty, herby no-cook dish.

Strawberry and gooseberry lamingtons

I’ve never come across gluten free lamingtons in a bakery in the UK. They’re one of the cakes I stare at most, wondering how that thin, glossy chocolate coating tastes alongside the fluffy sponge and sweet jam filling. I’ve always wanted to try them and when Cherry Tree Preserves kindly sent me some of their jams, it seemed like the perfect opportunity!

Gluten free miso chocolate chip cookies

Crunchy on the outside and chewy on the inside gluten free chocolate chip cookies, with the most amazing salty, savoury flavour addition from a surprise ingredient: white miso paste.

Low FODMAP courgette, feta and herb fritters

I’ve been making a batch of these courgette, feta and herb fritters on Monday nights for the week ahead. They keep really well for a few days and are delicious cold in a lunchbox.

Low FODMAP strawberry and basil soda

My homage to the drinks in my favourite Berlin cafe; a FODMAP friendly strawberry and basil soda that can be fixed up in minutes and served to friends and family for the best summer refresher.

Crab, tomato and basil bruschetta

Gluten free crab, tomato and basil bruschetta. Cut in quarters to make the perfect snack, or keep them as they are for a delicious and decadent lunch. I recommend serving in the sunshine with a glass of chilled white wine for extra joy.

Gluten free goats cheese, spinach and radish free form tart

A free-form, gluten-free, FODMAP-friendly tart of dreams. Made with a crumbly buckwheat pastry and filled with gooey, crispy goats cheese, spinach and radishes, it’s light, seasonal and would make a stunning centre piece on any spring table.

Broccoli, peanut, soba noodle salad

Anyone else often find themselves stuck in a bit of a lunch rut? This FODMAP friendly buckwheat soba noodle salad is your new go-to work (whether that be at home, in an office or whatever wonderful thing you do) lunch.

Gluten free grapefruit poppy seed loaf cake

An update on the lemon drizzle classic, this is a really easy but delicious bake, that bar a few grapefruits, uses ingredients you’re likely to already have in the cupboard.

No-bake FODMAP friendly salted chocolate tart

Minimum faff and maximum taste. This my friends might just be the ultimate no-bake, FODMAP friendly salted chocolate tart.

Earl Grey, lemon and poppy seed Mother’s Day cake

I posted a photograph of this Earl Grey, lemon and poppy seed cake on Instagram and you lovely people went wild. A stunning celebration cake for any spring or summer occasion, think layers upon layers of fluffy Earl Grey, lemon and poppy seed sponge, sandwiched together with tart lemon curd and creamy Earl Grey buttercream.

Edible flower shortbread

It’s Mother’s Day and I’m feeling all sentimental about the main lady in my life. While I’m not the biggest fan of the commercial side of Mother’s Day, I do think it can be a great time to stop and give thanks when you’re lucky enough to be able to so. And I am so very lucky to have a strong, brilliant, beautiful mum – who loves a sweet treat.
